Winding down...babbling to myself

Still a few things to do..

~Cookies are made (and disappearing too quickly!) May make some crescents later.

~Gifts are all purchased - finally. Only 4 more to wrap.

~Need to pick up some produce for the frenzy of cooking I'll be doing tomorrow: 2- Watergate salads, Pineapple Cake (see very easy, convenience item recipe to follow. Great for when you're out of time and want to make something that'll impress), Pepperoni Pasta salad, 2 green salads, 1 traditional lasagna, 1 white chicken lasagna, 1 ham, homemade breadsticks...hmm, that's not so bad.

~Ever give away a recipe to someone who makes it sooo much, that everyone forgets that it was yours to begin with? That's what happened to my White Chicken enchiladas recipe. My sister-in-law makes it for every other occasion now, so when anyone is craving it - we ask her to make it. Ahh, that's quite alright, now I don't have to make it every holiday :)

~Need to clear out the guest room for Dad's visit.

~Lots of eating on the horizon.. potluck Christmas eve dinner, then Noon meal at IL's on Christmas Day and evening dinner w/ my family - at my house- Christmas night.

~Hubby and I decided to buy some fun cereal for breakfast on Christmas morn. Nice and easy. We bought some Lucky Charms for the girls - they're gonna love it. He's home all day tomorrow - hurray! - so we'll do our usual all-out, mega-big breakfast then - he loves breakfast, and the best part is: he makes it!

~Need to straighten up a bit around the house, and do a load or two of laundry....

Here's that recipe, my mom use to make this every Christmas and Easter for family dinners. Everyone loved it, and it's so easy!:

Pineapple Cake

1 pkg yellow cake mix
8 oz of cream cheese
1 pkg instant vanilla pudding
1 can of crushed pineapple

Make cake according to package directions. Can make this with 2 rounds or sheet cake style.

Make vanilla pudding, according to pie filling directions on the box and add softened cream cheese. Beat until smooth.

Layer cake, pudding mixture and sprinkle drained pineapple over the top. Add second layer, repeat. (if you're doing sheet cake, split the cake horizontally with a bread knife or dental floss(!), open on a piece of wax paper - add pudding mixture and sprinkle half can of pineapple, cover with top layer of cake and repeat).

Refrigerate!

I use to love licking the bowl of the pudding mixture when I was a kid.
