Carbs, carbs, heavenly carbs

I am a carb addict. My addiction peaks in the fall with all the yummy harvest treats to make and bake.

Apples and pumpkins are the featured foods in my house around this time of the year.

Here are two recipes that are easy and taste great too:

Apple-Cinnamon Cake

1 pkg Spice Cake Mix
1 can apple pie filling
3 eggs
3 tbsp sugar
1 tsp grd cinnamon
Whipped topping

Heat oven to 350F. Grease bottom of 13x9 pan. Beat cake mix, pie filling and eggs in lg bowl (batter is thick).

Spread half mixture of batter in pan. Stir together sugar and cinnamon; sprinkle half of mixture over batter in pan. Spread remaining batter in pan; sprinkle remaining sugar-cinnamon mixture.

Bake 30-35 minutes. Cool. Serve with whipped topping and sprinkled with dash of cinnamon.

Pumpkin Dip

4 cups powdered sugar, sifted
2 - 8 oz pkg cream cheese, softened
1 can (30 oz) pumpkin pie filling mix
2 tsp ground cinnamon
1 tsp ground ginger

Mix ingredients until smooth. Use as dip for apples, ginger snaps, bagels etc!
