I did myself a favor and stepped on a scale after a two month hiatus from WW. YIKES! I knew I had been bad, but still that number that pops up on the screen is always a good cold splash of water in the face.
Sooo, I've pulled out all my books and am trying to be good, but it's still hard with all the holiday goodies still lingering. So this is what's in my oven right now, and they are so simple and so yummy and only 1/2 pt each - I can feel like I'm indulging still:
1 can pumpkin
1 box spice cake mix
2 c shredded carrot
Mix, drop in generous 1 tsp rounds on ungreased cookie sheet. 350 degrees for 20-25 minutes. Makes 48!
